Lo Sparviere
Lo Sparviere is an organic winery making Franciacorta DOCG sparkling wine using Metodo Classico – the classic method. This is similar to how its famous cousin, Champagne, is produced. Lo Sparviere’s style is defined by very long lees ageing (starting at 30 months for “Cuvée 7”, up to 72 months for Riserva). This is much longer than the 18 months required by DOCG rules. Long ageing is expensive, but creates very complex wines. Additionally, after the first fermentation, Lo Sparviere’s Saten and Millesimato wines are aged in oak to add even more structure.
Lo Sparviere is located in the eastern, mountainous part of Franciacorta DOCG. The terroir here is influenced by the cooling influence of the Lombardian Prealps (also known as “Rhaetian Alps”). The harvesting time is late August, two weeks later than lowland Franciacorta, due to the colder microclimate.
